What kind of rennet do you use in your cheese?

Our Amish cheeses are made using a specialized vegetable rennet, created through fermentation. It's vegetarian and kosher-friendly, allowing you to enjoy cheese guilt-free knowing no animals were harmed in its production.

Do you use pasteurized milk to make your cheese?

Yes. We use pasteurized milk to ensure the safety of our cheese by eliminating harmful microorganisms. This process also contributes to the consistency and flavor of the final product.

What is annatto, and is it safe?

Annatto is a natural coloring agent derived from the seeds of the achiote tree, commonly used to give cheese an orange hue. It's completely safe to consume and used in a wide variety of food products.

How are your smoked cheeses smoked?

Our smoked Amish cheeses get their distinct flavor from natural smoke essence, created by heating wood chips or sawdust to capture the smoky aroma. This essence is added to the cheese to infuse it with a rich, smoky taste without direct exposure to flames.

How will my cheese come packaged?

Each cheese is vacuum-sealed for protection and packed with bubble wrap in a repurposed box. If an insulated carton was ordered, gel ice packs are included to keep the cheese cool during transit.

My cheese has a white film or white crystals on it. Is it still good to eat?

White specks or a white film on your cheese are calcium lactate or tyrosine crystals, a natural result of the aging process. These crystals are harmless and indicate that your cheese is well-aged and flavorful.

Why does my cheese package have liquid in it?

The liquid, often liquid whey, is a natural occurrence and does not affect the quality of your cheese. Simply wipe it off with a napkin or paper towel and store the cheese as directed.

My cheese got moldy. Should I throw it out?

Most mold on cheese is harmless. Cut away at least half an inch around the moldy area, avoiding contact with the mold to prevent spreading. The remaining cheese is still safe to eat if used promptly.

How long will it take me to get my cheese?

We ship orders on Mondays, Tuesdays, and Wednesdays (excluding UPS holidays). Orders received after noon on Wednesday will ship the following Monday. For shipping details, please refer to our Shipping and Returns page.

Is it okay to eat my cheese if it's warm when it arrives?

Yes, it's fine. Cheese has been enjoyed for centuries without refrigeration. Simply refrigerate it upon arrival and allow it to reach room temperature before consuming for the best flavor.

What if I'm missing some items in my order?

If an item is out of stock, it will be noted on your Packing List. For minor issues, we'll issue a refund. For larger issues, please contact us to arrange a reshipment when the item is back in stock.

What's the best way to store opened cheese?

Use cheese paper or waxed paper to store opened cheese in the refrigerator. This helps regulate moisture and maintain flavor. For alternatives, use parchment paper or a resealable plastic bag, and keep the cheese away from strong-smelling foods.

Check periodically to ensure freshness and flavor integrity.

Can I freeze cheese?

Freezing cheese can alter its texture, making it crumbly. Wrap the cheese in moisture-proof materials and place it in an airtight bag before freezing. Thaw in the refrigerator and consume promptly. It's best to shred or slice the cheese before freezing.
