Grew up in Ohio and there was always brick cheese in the fridge. Moved to Minnesota as an adult and found out they never heard of brick cheese. I was devistated. I now order a good supply of brick cheese several times a year. The unopened vacuum sealed cheese keeps in the fridge for many months. The one pound blocks are a perfect size. I open one at a time and it never is around long enough to spoil once opened. I now have a reminder of my childhood each time I eat some.

This was another favorite of mine along with the horseradish cheddar. Hard to find brick cheese around here. When you do it's expensive in the store deli departments and they're salty. I prefer to eat this over any of the over priced supermarket or deli store processed American cheese products now.
